Viewers were transported to the rugged terrain of Italy's Calabria region during our Master Class "Boot" Camp session highlighting PDO and PGI products from Calabria on May 18. Together with food educator Francesco Lupo, Silvia Barban, Executive Chef of LaRina Pastificio e Vino, and Jackie Rothong, Chef/Brand Ambassador for Viking, delved into the characteristics and qualities that define these ingredients and transformed them into two delicious regional dishes, Polpette di Melanzane and Maccheruni al ferretto. Michele Cianciulli, Co-Founder of Enoclassica Selections, presented a selection of Calabrian wines to pair perfectly with the menu and IACC Executive Director Federico Tozzi shared his recipe for a bergamotto spritz featuring Calabria's indigenous bergamot citrus fruit, grown exclusively in Reggio at the tip of Italy's boot.
